The ultrapasteurization or pasteurization UHT (from the English “Ultra-High Temperature”), is a process of food sterilization by heating.
The liquid to be sterilized is heated for a short period (about 4 to 8 seconds) at a temperature of 140 ° to 150 ° C, enough to kill or neutralize bacterial spores, and is immediately cooled to a temperature below 25 ° C.
In the UHT treatment, the objective is to maximize the destruction of microorganisms with the minimum of alterations to the product. This means finding the ideal combination of temperature and processing time for different types of food, the brevity of the treatment makes it possible to obtain a product of the highest quality.
